Smoky pulled chicken

Serves: 4-6

This smoky lean chicken will make a perfect dinner that you can prepare in a jiffy and pop in the oven for the magic to work. The deeply smoky flavour comes from smoked paprika and ancho chilli flakes - mild and sweet-tasting variety of chilli. If you like it spicy - add some chillies as per your personal preferences. It is made with home-made barbeque sauce.
You can serve it with rice, spiced potatoes,  in tacos, over baked potatoes, in a bun with lettuce or even stuff tortillas with it. If you make too much - pop it covered in the fridge and eat it for lunch with your choice of bread. Add a fresh salad, lettuce or guacamole. 

4 chicken breast
1 Tbsp vegetable oil
1 large red onion chopped finely
3 cloves of garlic, chopped
1/2 cup (125 ml) ketchup
3 Tbsp brown sugar
3 Tbsp cider vinegar
3 Tbsp tomato paste
1.5 tsp paprika
1 tsp smoked paprika
1 tsp ancho chilli flakes
1 lime, juice only
3 Tbsp water
salt and black pepper

1. Pre-heat the oven to 180*C. 
2. Season the chicken generously with salt and pepper. Heat the oil in the pan and brown the chicken. Put the chicken in an ovenproof dish and add chopped onions to the frying pan to soften it. Then mix the onion with the rest of the ingredients and pour over the chicken. Cover tightly with silver foil and put in the oven to cook undisturbed for 1.5 hrs.
3. Take the chicken out of the oven and shred the meat using 2 forks. Mix with the juices. Serve immediately with the side of your choice.
