Passion fruit ganache

Serves: 6-10

This beautiful dark chocolate ganache flavoured with passion fruit makes an exquisite dessert. Velvety and rich, the deep chocolate is balanced with the freshness of passion fruit.
You can prepare this dessert ahead until you ready to serve. 

50 g passion fruit puree (4-5 passion fruits)
65 g double cream (about 75 ml)
15 g golden syrup
190 g dark chocolate (preferably 65-70% cocoa solids), chopped
30 g unsalted butter, melted
1 tsp vanilla paste

1. Make the passion fruit puree by sieving the pulp into a little pot. Discard the seeds. Measure out 50 ml.
2. Put passion fruit purree with cream in a pot over a medium flame and bring to the boil. Take off heat. Add chopped dark chocolate, swirl the cream to cover the chocolate. Leave for about 1 minute and then add the golden syrup, vanilla paste and melted butter and mix well. Pour in moulds and chill.
3. If you do not have the moulds, leave it in a pan to cool completely, then scoop small amounts with spoon and roll in cocoa powder or coconut flakes. Chill.
