Honeyed parsnips Indian style

Serves: 4-6

Sweet and gently flavoured parsnips are a perfect addition to serve with your dinner. This recipe is easy to follow and quick one to deliver.  
Parsnips are root vegetables packed with fiber, vitamins (C, K and folate) and minerals. 

800 g parsnips, peeled and cut into thick chips
1 Tbsp vegetable oil
3 garlic cloves, minced
1 tsp cumin, ground
1 tsp sweet paprika
1/2 tsp turmeric
1/4 cup (60 ml) honey
1/4 cup (60 ml) vegetable stock
salt and black pepper
a small handful of fresh coriander, chopped 

1. Start with parboiling the parsnips - bring a saucepan of water to boil, add the parsnips and cook for about 5-7 mins until soft but still firm. Drain.
2. Heat up the oil in a wok or a non-stick frying pan. Add garlic, cumin, paprika and turmeric and fry for about 20-30 secs - do not burn the garlic! Add the parsnips and mix with spices until the parsnips are covered in them. Add the honey and stock and cook for about 10-15 mins until the liquid evaporates. Season with salt and pepper and add the chopped coriander. Transfer to a serving plate.
