Light and healthy coleslaw salad with a mix of crunchy vegetables. This vegan side dish is delicious and full of goodness - cabbage itself contains cancer-fighting properties, vitamins K, C, B, potassium and folate.
For the salad:
1/2 medium cabbage head, finely sliced
2 medium carrots, peeled and grated
10 radishes, grated
half a cucumber, finely sliced and cut in half
1/2 medium onion, finely sliced
large handful of fresh parsley leaf, washed and finely chopped
For the dressing:
3 Tbsp extra virgin olive oil
2 Tbsp maple syrup (or agave)
juice of a large lemon (or 2 Tbsp cider vinegar)
1 large garlic clove, finely minced
1 Tbsp za'atar
pinch of cayenne pepper
salt and black pepper
1. In a small jar or container with lid mix together all the dressing ingredients. Shake well until combined.
2. Put all the salad ingredients in a bowl. Pour over the dressing and mix well.
3. Serve straight away or allow to rest in a fridge before serving.
