Bell pepper salad

Serves: 6-8

Light and simple salad that is easy and quick to prepare. It is beautifully colourful and it tastes superb! Peppers are low in calories and an excellent source of vitamin A, C and potassium as well as fibre, folate and iron. A must side dish on your table!

For the salad:
3 bell peppers - 1 yellow, 1 orange and 1 red, sliced into strips and halved
1/2 red onion, finely sliced
150 g sugar snaps, sliced in 3, lengthwise

For the dressing:
3 Tbsp extra virgin olive oil
2 Tbsp cider vinegar
1 heaped tsp dill
salt and black pepper

1. In a small jar or container with lid mix together all the dressing ingredients. Shake well until combined.
2. Put all the salad ingredients in a bowl. Pour over the dressing and mix well.
3. Serve straight away or allow to rest in a fridge before serving.
