Saag aloo - authentic potato and spinach curry

Prep time: 10 mins     Cook time: 35 mins 
Serves: 4-6

Delicious side dish for any curry! It is a very comforting and packed with the wholesome goodness of spinach and plenty of spices dish. 

1.5 tsp mustard seeds
2 Tbsp canola oil
750 g new potatoes (or peeled potatoes cubed)
1 tsp cumin seeds, ground
1 tsp turmeric
1 tsp garam masala
1 tsp chilli powder (or to taste)
4 garlic cloves, finely chopped or grated
2 medium tomatoes (or 1/2 can chopped tomatoes)
2 large handfuls of spinach, washed and shredded

1. Cook the potatoes until tender. Cool under cold water (you can prepare in advance).
2. Heat up oil in a saucepan, throw all the spices and potatoes. Stir to coat. Allow to cook until potatoes start to crisp on all the sides. Then add garlic and tomatoes. Cook for about 2 mins and finally add spinach. Cook for another minute (until the spinach wilts) and serve.
