Leeks and spinach agrodolce (sweet and sour)

Serves: 4

Leeks and spinach agrodolce is an Italy inspired vegan side dish. Agrodolce stands for sweet and sour. It is light and full of flavour and will make a great addition to your lunch or dinner.

1 Tbsp olive oil
about 450 g leeks (white and pale green parts only), sliced 0.5 - 1 cm thickness
1-2 garlic cloves, sliced thinly
1/2 tsp chilli flakes
2 Tbsp raisins (I use a mix of brown and green raisins but regular brown will do)
2 Tbsp currants
splash of red wine vinegar
2 handfuls of fresh baby leaf spinach, washed
2 Tbsp pine nuts, toasted
salt and black pepper

1. Gently heat the oil in a frying pan and add leeks and garlic. Add 1/2 tsp salt and soften cooking on low medium heat for about 10 mins stirring occasionally.
2. Add chilli flakes.
3. Add raisins and currants and cook for another 5 mins. 
4. Add red wine vinegar and give it another 2 mins. Then add spinach, mix and wait until it wilts but still holds the shape (about 1 - 2 mins). Season with black pepper and add more salt if necessary.
5. Add pine nuts and serve.
6. Enjoy!
