Bhuna Gosht - medium-hot lamb curry

Bhuna Gosht is a traditional Indian curry recipe usually made with mutton. I prepare it with lamb in this recipe and add carrots. It is cooked with onions and tomato paste with a variety of aromatic spices to enhance its flavour. Meat is cooked till it is very tender. Very special curry, serve it with rice and naan or as a part of a larger Indian feast. Easy to prepare - you just wait for the result as it cooks slowly filling the house with a beautiful aroma.

3 Tbsp canola or mustard oil
1 Tbsp brown mustard seeds
5 green cardamoms
3 black cardamoms
4 bay leaves
1 cinnamon stick
500 g onions, finely chopped
750 g lamb neck, cut into cubes
400 ml (1 can) good quality chopped tomatoes
6 garlic cloves, minced
2-inch fresh ginger, minced
1 Tbsp cumin seeds, toasted and ground
1 Tbsp coriander seeds, toasted and ground
1 Tbsp garam masala
1 tsp Kashmiri chilli powder
1/2 tsp turmeric
salt and black pepper
100 ml vegetable stock or water
a handful of fresh coriander leaves, chopped
 
1. Heat up oil and add the whole spices (mustard seeds, cardamoms, cinnamon and bay leaves). Sizzle for 30 secs.
2. Add onion and fry until translucent. 
3. Add lamb meat and fry until browned (about 2-3 mins).
4. Add tomatoes and all the ground spices along with minced garlic and ginger. Cook for 2 mins. Finally add stock (or water), season with salt and pepper and simmer covered on low heat until meat is tender - alternatively cover tightly with a lid and put in pre-heated to 140*C oven and cook for about 3-4 hours.
5. When the meat is soft and you are ready to serve, add the chopped fresh coriander, mix and serve.
