Green courgette vegan 'pasta'

This is the green pasta is full of goodness and vitamins and tastes great! It's amazing on a hot day, very quick to assemble and very fresh in taste. You can top it up with parmesan but it is not necessary.

1 medium courgette, shaved with vegetable peeler (for parpadelle) or with julienne peeler (for spaghetti)
2 tsp olive oil
2 garlic cloves, minced
3/4 tsp thyme
1 cup (125 ml) green peas (frozen)
1/2 lemon, zest and juice
1 big handful of fresh parsley leaf, chopped

1. On a very low heat, put oil in a small frying pan and add garlic and thyme. Allow to heat up slowly to fragrant the oil (1 min). 
2. Add your courgette pasta and allow to soften (about 1.5 - 2 mins).
3. Add lemon zest and juice along with green peas. Put a lid on and allow to steam through for just under 1 mins.
4. Plate up and add parsley leaf and enjoy!
