Tzatziki - cucumber and mint dip

A classic Middle Eastern appetiser with yoghurt, cucumber and mint. Refreshing and very easy to make - great as an addition to your meals, as a dip for crudites or a sauce in a pitta with salad and falafel.

300 ml yoghurt (plain or Greek)
1 cucumber, grated
1 tsp fine salt
1 cup fresh mint leaves, stalks removed - finely chopped
2 tsp lemon juice
pinch of cayene pepper
black pepper

1. Grate the cucumber and sprinkle with salt. Leave on colinder for 10 mins to dehydrate it. Then quize sa much juice out as possible.
2. Mix all the rest of the ingredients and chill in the fridge.
