Roasted spiced butternut squash recipe

Serves 4

Delicious roasted butternut squash: fuss-free - just pop in the oven and set up the table! The spices bring out the flavour of this earthy vegetable and compliment it to the T!

1 butternut squash, peeled and cubed
2 Tbsp extra-virgin olive oil
2 tsp cumin seeds, toasted and ground
1 tsp coriander seeds, toasted and ground
1 tsp ginger, ground
1/2 tsp cinnamon
1 tsp Kashmiri chilli
salt and pepper
fresh coriander to serve

1. Heat the oven to 200*C.
2. Combine the spices. Put the cubed squash in a baking dish big enough so that the pieces are in a single layer. Drizzle with oil and sprinkle the spices over. Toss together so the butternut squash is coated evenly.
4. Pop in the oven and bake for about 30 mins - or until the squash is tender. Toss it once halfway through.
5. Serve immediately!
