Quick Japanese style pickled cucumber

Sweet and sour cucumber recipe that is crunchy and bursts with a clean flavour. Super easy and quick to make this pickled cucumber recipe is a great side dish to be served with your dinner.

You can also make it by adding thinly sliced white radish (daikon or mooli) or regular radish to marinate with cucumber.

 

1 long cucumber, very thinly sliced (try to opt for a thin with fewer seeds in)

1 Tbsp salt

1 small white onion, thinly sliced

6 Tbsp rice vinegar

2 Tbsp white sugar

¼ tsp salt

Sesame seeds, to serve

 

1. Put the sliced cucumber in a colander and sprinkle with salt. Let it sit for about 10 mins. Squeeze the juice out.

2. Combine the sugar with rice vinegar and a quarter of a teaspoon of salt until dissolved. Marinate for 30 mins.

3. Sprinkle with sesame seeds and serve.

4. Eat immediately it put in a jar and keep in the fridge for up to 3 days.
