Quick and light turkey biryani

Serves: 3-4 

An aromatic biryani for the people on the go: quick to prepare and full of flavour. I am using lean minced turkey but it can be easily substituted for chicken or lamb (lamb will be not as light but equally delicious). I am using my home-made spice mix for the biryani - you can substitute for over the counter one or even regular curry powder.

1 brown onion, finely chopped
1 Tbsp vegetable oil
1 Tbsp Biryani spice mix (or curry powder)
salt and pepper
4 cloves of garlic, minced
500 g minced lean turkey 
1 vegetable stock cube
2 Tbsp tomato puree
175 g basmati rice
400 ml cold water
70 g sultanas
170 g green beans, cut in 1" pieces
1/2 cup frozen peas
chopped coriander leaf

1. Heat the oil in a medium-sized pan and soften with the salt, pepper and Biryani spice (3 mins). Add garlic (30 sec), then add minced turkey and break with a spoon, cook further 2 mins.
2. Add the stock cube and tomato puree and mix well (2 mins). Finally, add rice, sultanas, water and green beans. Cover the pan with the lid and reduce the heat. Let it simmer for 10-12 mins or until the water is fully absorbed and rice cooked. Mix in the peas and give it another 1 mins.
3. Decorate with chopped coriander and serve!
