Pizza

Makes: 2 large thin pizzas

When you feel like a pizza and the whole family cannot agree on toppings - make your own! the beauty of this recipe is that you can roll it as thin or thick as you like. You can personalise it to your liking - no one will leave the table disappointed!

450 g white bread flour (or plain flour)
7 g dried yeast
1/4 tsp salt
1 tsp sugar (or maple syrup)
1 Tbsp olive oil
250 ml luke-warm water

Mozzarella cheese (shredded) and any of the toppings you might like: olives, pepperoni, capers, anchovies, peppers (cut thinly), red onions (shredded), sun-dried tomatoes, jalapenos, chilli flakes, cheddar (grated) etc.

1. Mix the dry ingredients. Add all the wet ingredients and knead in a food processor with dough attachment or by hand for about 10 mins. The dough will be stretchy and leave the sides of the bowl.
2. Put in a well-oiled bowl and cover with cling film (or cotton kitchen towel), put in a warm place to allow to double in size.
3. Heat up the oven to 200*C (or if you can even higher temperature) and move the baking shelves to middle and above setting. Put the trays in the oven to heat up.
4. Divide the dough and roll out on lightly floured surface. Work 1 pizza at a time. Take the tray out of the oven, place the rolled dough on the hot tray, apply the sauce add toppings (if any) and top up with cheese. Try to leave 1 cm gap from the edge. Put in the oven to bake for 10 to 15 mins.
5. Start preparing another pizza (repeat step 4). 
6. Using pizza cutter, cut the pizza and serve piping hot!
