Perfect tomato sauce

A perfect tomato sauce - for a simple pasta or as a base for your pizza. Pairs well as a sauce to go with pasta and chicken schnitzel. I always keep a jar in the fridge for the days when I have no more than 10 mins to prepare a meal as it tastes better than shop-bought one.

3 garlic cloves, minced
1.5 tsp thyme
1 Tbsp olive oil
400 ml plum tomatoes (preferably fresh but you can use canned also)
1 tsp balsamic vinegar
1 tsp maple syrup
salt and pepper
fresh basil leaves

1. On a very low flame, heat up oil with garlic and thyme. keep your eye on it not to allow the garlic to brown - you just want to release the flavour. Burnt garlic tastes bitter.
2. Add tomatoes with vinegar and maple syrup and cook for about 25 mins. 
3. Depending on your preference, either puree for smooth consistency (for pasta or to serve to children ;-)) or leave it chunky to serve with freshly made pasta.
5. Add fresh basil leaves and serve.
