Tabbouleh

makes 1 large salad

My favourite salad - this fresh and delicious Mediterranean salad is packed with fiber, antioxidants and healthy fats. Easy to make and great as a part of a mezze platter or just as a side salad.

Dressing:
1/3 cup fresh lemon juice
1/3 cup extra virgin olive oil
1/3 cup bulgur wheat
1 Tbs pomegranate molasses (optional) 
1 tsp salt
1/2 tsp pepper

Salad:
2 1/2 cup fresh parsley, finely chopped
1/2 cup fresh mint leaves, stalks removed, finely chopped
1 medium red onion, finely chopped
1 medium cucumber, finely diced
2 large tomatoes, skin removed, finely diced

1. Mix well all the dressing ingredients and leave for bulgur wheat to soak all the juices for about 2-4 hours.

2. Mix the rest of the ingredients well along with the bulgur wheat. Serve immediately. Best served on the same day but will keep well in the fridge for 3 days.
