Crepes

Serves: 4 - 8 (depending on appetite)

Perfect pancakes - delicious and very easy to make. You can serve them with any of your favourite toppings: berries, jam, Nutella, bananas with maple syrup or just with the simple addition of sugar and lemon juice. My boys would have it every day if they could...

75 g unsalted butter, melted
190 g plain flour
pinch salt
eggs    
340 ml whole milk
2 Tbsp (30 g) sugar
1 tsp oil

+ topping of your choice

1. Mix all the dry ingredients in a bowl. Mix all the wet ingredients in a jug.

2. Start by whisking some of the wet ingredients (just under half the jug) and mix well to create a lump free batter. Slowly add the rest of the milk and egg mixture. Cover and rest the batter for 20 - 30 mins.

3. Set a medium frying pan (non-stick preferably) over medium heat and allow to heat up. 

4. When hot, pour some batter into the pan and swirl around to cover the whole bottom of the pan. Allow frying until golden for about 1 min on each side. Keep them warm in a low oven as you go.
