Carrot slaw

Super fresh and zingy carrot salad full of goodness, a great compliment to lunch or just as a healthy snack. This carrot slaw will look amazing on the table and give you a healthy glow.

Salad:
1/2 kg (about 1 lb) carrots, peeled
2 Tbsp fresh parsley, finely chopped
spring onions, finely sliced
1 Tbsp sesame seeds, toasted

Sauce:
1 tsp Dijon mustard
2 1/2 Tbsp extra virgin olive oil
2 Tbsp honey
1/4 tsp salt
1/4 tsp freshly ground black pepper    
1 Tbsp freshly squeezed lemon juice                   

1. Start by making the sauce: combine all the ingredients, mix well, taste and adjust the seasoning if necessary.

2. Grate the carrots (in a food processor or by hand), mix with parsley, spring onions and the sesame seeds. Add the sauce and mix well.

Note: you can replace the sesame seeds with toasted walnuts for a little more crunch.
